Eye of the round is a lean, round-shaped muscle of about 5 lbs. in all. It can be oven or pot roasted to deliciously tender results, but it is lean and requires care and some liquid to keep it moist.
Braised it will melt in your mouth after about 2.5 to 3.0 hours at 250 F, or pot roasted with liquid over a low flame for around the same length of time. It slices into very uniformly shaped medallions, which is one of the reasons it enjoys popularity as a roast beef carved at the table.
Maximal roast weight is 5.0 lbs.
