Bottom round, also known as the "flat", is the single largest roast on any meat animal.  It is a mighty, meaty, and thoroughly flavorful cut that is best destined for low and slow oven Oven Roasting, pot Oven Roasting, or braising, and does phenomenally well sous-vide. It does beautifully when covered and slow roasted, but it will yield much wider and more uniformly shaped slices than brisket will. Take care to keep it moist and to keep liquid in the pot or pan. Bottom Round will max out at about 8.0 lbs. when trimmed, and can be cut to any weight.
