
Tri-Tip steaks are delicious roasted or grilled at a low heat to around medium-rare. They have a medium grain and are well marbled, which allows them to remain succulent when cooked with dry heat.
They are also superb smoking cuts, and as such enjoy tremendous popularity on the West Coast and in South American (Punta Trasera, in Spanish). The fat cap has a uniquely sweet flavor to it and absorbs smoke fantastically well.
