By far one of our best sellers, flap steak is an incredibly succulent, supremely marbled, and wonderfully versatile steak. Â It can be prepared with supreme results on the grill, in a pan, or dry roasted in an oven. But it is out of this world when smoked. Classically paired with garlic, carmelized onions, and mushrooms. Known as "la bavette" (the bib) in French and "la falda" (the skirt) in Spanish, owing to its broad, flat shape. A whole flap steak weighs about 3.5 lbs.
