There is no cut on a steer more tender than the aptly named Tenderloin. It needs no cooking whatsoever and is enjoyed the world over perfectly raw, in the form of carpaccio, sashimi, and tartare. Oven Roasting or pan frying it can introduce some complexity of flavor by browning and carmelizing the outside, but take care not to overcook it. It is a crime against humanity.
