The porterhouse is a dream steak. It comes from the posterior side of the loin and includes the meatier portion of the tenderloin (psoas major) on one side and the meatier portion of the striploin (longissimus dorsi) on the other, such that it is a marriage of supreme tenderness and ultimate steak flavor in one cut. We recommend a minimum thickness of at least 1.25" as the tenderloin is anchored by a somewhat soft muscle after Niqur.
