Beef top round is the largest, roundest, and easiest of the top sirloin cuts to roast. It slices beautifully and makes for mouth-watering presentation when carved at the table.
Roast it to any desired degree of doneness, though we’d recommend medium-rare for best and juiciest results. And by all means roast it slow. Given it’s round shape and thickness, low and slow is the only way to roast such a large cut while retaining its internal moisture.
An entire top round roast can weigh upwards of 10 lbs., so it is a great choice if you’re looking to host a large number of guests or if you like your roasts rarer towards the middle.
