Culotte, also known as the rump cap, is a heavily marbled, heavily flavored roast. It comes with a 1/4″ fat cap and will outdo a brisket any day of the week with thicker, richer slices, a fraction of the cooking time, and a beautiful presentation.
Culotte is king in both oven and smoker, and will do wonders when grilled over a medium to low flame as well. Our preference is for medium-rare to medium.
The maximal weight per Culotte roast is approximately 7.0 lbs.
