Heel Steaks – known as “Picanha” in Brazil – is a unique find of a steak. Located in the calf muscle, they have a deep, dark color, a very rich and meaty flavor, and a uniquely soft texture.
They are very lean and completely denuded, so they benefit most from pan frying with oil, braising with a bit of liquid, or gentle grilling. The flavor is among the richest on the steer, so it pairs nicely with carmelized onions, sauteed mushrooms, and/or wine sauces.
The maximum weight of an individual steak is ~1.5 lbs.
