Flank steak is a tasty cut off the center of the flank, or skirt. It is delicious and flavorful, and will make you proud so long as you give it some time to break down and soften up.
It is another extremely popular cut in Central and South American cooking, where it is especially sought after for steak sandwiches, fajitas, and other wrap-style preparations.
Pan fry it at a medium or low heat or braise it in the oven for best results. Medium-well is probably the ideal target doneness for soft texture and great flavor.
Maximal weight is 2.5 lbs per steak.
