Leave It Out!
A room-temperature steak gets the best results, so leave it out of the fridge for about an hour before cooking.
Hot Pan, Dry Steak!
Heat that pan until a drop of water dances and pat the steak dry before cooking to remove excess moisture.
Using kosher avocado oil (our favorite!), or another high smoke-point oil, is essential for a crisp sear and perfect flavor.
You Gotta Let It Rest!
If you want tender, juicy meat under that sear, you MUST let it rest 5 minutes for every inch of thickness before you cut into it. Trust us.
