Lomo Embuchado is a Spanish delicacy. A whole loin (Lomo) is salt cured and spiced, and then hung to dry for a few months. Since loins are meaty and flavorful even raw, the drying process intensifies the meat’s flavor and concentrates the whole spectrum of meatiness.
